Creamy Dreamy Layered Desserts

I recently made some pastries and was left with some pastry cream.  Other than grabbing a spoon and just having at it (tempting but not the healthiest choice), I wondered what I could do with it.  I could make some additional pastries, but that process was quite time consuming and I was looking for something a little quicker.  I had a dinner party coming up so I decided to do a spin on a trifle or tiramisu style dessert while mixing up the ingredients some.  I checked out my pantry and found some cookies, nuts and berries in the fridge and started to experiment.

The results were pretty amazing – creamy but light, with a delightful crunch and a tart fruity twist.  A combo of crushed cookies and nuts gave me my crunch, a dusting of coca powder in between layers added a note of bitterness and fresh berries added the right touch of tartness.

I layered the dessert in mini mason jars (I saw this recently at a neighborhood restaurant I was at and thought it was cute) and served them with a shot of Pernod on the side.  Once you plunged in for your first spoonful, you could pour the shot directly into the dessert.  YUM! I had all these ingredients handy, so this literally took me less than 5 minutes to assemble.  Easy, delicious and impressive, the recipe can be modified in so many ways.  This ones a keeper.

Makes 4 servings

1 cup pastry cream
250 ml whipping cream
1 teaspoon sugar
3 tbsps toasted crushed nuts (almonds, hazelnuts, pistachios, anything really)
1 tbsp cocoa
6 crunchy cookies (I used biscotti for one and a chocolate biscuit for the other because that’s what i had, but any crunchy cookie can be used; amaretti, macaroons, shortbread, etc)
1 cup fresh raspberries/blackberries (can also use blueberries, strawberries, etc)
1.  Whip cream until stiff, sweeten with sugar to taste

2. Gently fold whipped cream into pastry cream

3. Layer your ingredients: cream, dusting of cocoa, crushed nits, crushed cookies, berries, and then repeat.

4. Finish off with a couple of berries, a dusting of cocoa/cookie crumbs and shot of liquor on the side.
