Notice the first word in this post? Easy. My favourite word. And when you have a hungry family to feed on a busy weeknight, easy is where it’s at.

My second favourite word is delicious. And I didn’t mention that in the title, but this salad is delicious.

I love salads that work as an entire meal. This is one of my favourites. I first had it at my friend Cathy’s house years ago, and adopted it as my own. I tend to serve it when I have a girlfriend over for lunch, or when I need dinner in a snap. And it keeps fairly well, so I usually polish off the leftovers the next day.

This is a great salad to make when you have leftover chicken or turkey from another meal. Add some cheese and fresh bread on the side and you can get dinner on the table in no time.

Romaine Salad With Chicken and Pine Nuts
Serves 4

2 hearts of romaine
2 large chicken breasts
¼ cup pine nuts
¼ cup olive oil
Juice of ½ lemon
¼ cup Parmigiano-Reggiano cheese
Salt and pepper to taste

1. Coat a baking pan in olive oil. Salt the chicken and add grilling spices if you choose. Broil for about 10 minutes on each side, until the chicken is no longer pink and the juices run clear. Allow chicken to cool, and cut into strips.
2. Put the pine nuts on a baking sheet and toast in the oven at 375°F until golden brown, about 5 minutes. Be careful – these burn easily! Alternatively, you can toast in a dry skillet, about 3 minutes.
3. Wash the romaine and tear into bite-sized pieces. Toss with lemon, olive oil, salt and pepper. Top with pine nuts and chicken, and sprinkle with parmesan.
