Enjoying My Omegas

I am always on the lookout for easy ways to incorporate healthy habits into my daily routine. The list of important and beneficial vitamins and supplements that you read about is mind-boggling, and I don’t really like to pop a handful of pills every morning if I can avoid it. That’s why I love it when I find a great product that helps keep us all healthy in an easy and enjoyable way. I’m sure you’ve all read about the importance of good fats in your diet, and how Omega-3, Omega-6, and other essential fatty acids support the cardiovascular, reproductive, immune, and nervous systems. Deficiencies and imbalances in EFAs are implicated in a long list of serious health conditions, including heart disease, cancer, and brain disorders. I was surprised to read that 60% of your brain matter consists of fats, and about half of that is Omega-3. These facts were enough to get me thinking about introducing more of the right fats into my family’s diet. Vega makes a great product called Antioxidant EFA Oil Blend, contained a long list of seed oils including hemp, flax, and pumpkin. The best thing is the pleasant, nutty taste that makes it perfect for salad dressings. This way, the whole family can get their EFA “supplements” right on their dinner plate. What could be easier?

Here’s how we enjoyed our Omegas during Sunday’s dinner – a salad of fresh organic mixed greens with toasted pine nuts, goat cheese and strawberries, topped with Vega oil-balsamic dressing. Delicious!

Mixed Greens With Goat Cheese, Pine Nuts, Strawberries and Vega Balsamic Dressing
Serves 4

Salad:
6 cups mixed field greens
¼ cups pine nuts, lightly toasted
8 medium strawberries, sliced
4 tbsp goat cheese

Dressing:
4 tbsp Vega Antioxidant EFA Oil Blend
1 1/2 tbsp balsamic vinegar
1 tsp agave (optional)
Salt and pepper to taste

Divide salad ingredients into 4 portions. Place field greens onto each plate, then top with pine nuts, crumbled goat cheese and strawberries. Whisk together dressing ingredients, including agave if you like a touch of sweetness. Drizzle over salads and enjoy!
