I’m Always Finishing

In the last couple of years I have attended a number of different cooking classes and have become used to having all my ingredients laid out around me while I cook, within arms’ reach.  One habit I quickly adopted in my home kitchen is to have a couple of small plates or bowls of specialty salts around my stove handy for finishing a dish.
You can find a wide selection at many specialty food shops for a specialty price, but I have started seeing some carried in the bulk sections of local grocery stores or in different ethnic food stores for a much lower price.   Just pop them into a fancy jar or pile them onto a small plate to keep by your stove.  You can also infuse your salts with some herbs or spices to liven them up.  Here I blended some Pink Himalayan sea salt with dried jalapeno flakes and a little bit of basil.

A drizzle of olive oil and a pinch of this salt creates a great finish for BBQ’d steaks, chicken or even veggies.  The salt adds a little gourmet touch to your presentation and a little bit of zing to every bite.

    You need to post pictures of your culinary work missy! I really wanna try those cooking classes too, but I have no time.. When you take a cooking class, is it a specific kind of food (italian/asian/french) or do they show you the basics?

    Thanks so much for your encouragement about the photos, I am still teaching myself and experimenting. Re: classes – there are so many different ones offered in the city. Some can be very specific, others pretty general. You can google to try to find classes and descriptions, but the best information comes from student comments. Also, try to figure out if they are demonstration based or hands on – you learn much more at the hands on classes. Also, try Chowhound for information and reviews directly from people who have taken the courses.
