Anything made with grilled pineapple is the bomb. So last time I was grilling pineapple a little inspiration struck and I decided to make some Upside Down Cake. My niece was struggling to find something yummy to eat on a gluten free diet, so I did some research and decided to challenge myself to make a gluten free version. Results? Awesome. So here’s my version.
After looking at a bunch of recipes online, I took my inspiration from a recipe I came across on simplyfood.org. Katie’s recipe seemed like a great base, using healthy wholesome ingredients. I made a couple of modifications, and turned out a cake that was gone in a snap. Seemed like I had cooked up something good.
Pineapple Upside Down Cake
1/4 cup butter
3/4 cup coconut sugar (you can also use honey or unrefined cane sugar)
9 pineapple slices, (I like mine extra thick) dusted with coconut sugar and a pinch of salt and grilled until caramelized
1 1/2 cup gluten free flour mix
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup yogurt
1/3 cup apple juice
1 teaspoon vanilla extract

I had a mini 4 inch springform pan I wanted to try out so I made a little version which perfectly fit 1 slice. Too cute?
