Mini Banana Salted Caramel Oreo Crusted Ice Cream Cakes

Wow right?

I’m not usually a dessert person, but I am a sucker for a new gadget and when I spotted these mini 4 inch spring form pans, my mind started to itch with the possibilities.  Brunch?  Mini pizzas?  Apps?  I have to admit I am a little obsessed with the notion of individual portions and I landed on the opportunity to use these babies for a small dinner party recently.  I spotted these in a magazine, but when I went to purchase at a local kitchen supply store the prices were ridiculous.  Thank you Amazon, when 7 days and 16 bucks later, a little package of 4 of these arrived on my doorstep.  We (really my hubby) have been a little obsessed with the PC Salted Caramel Ice Cream lately and seeing as I had some in the fridge, I decided that a mini ice cream cake would be in order.  Here are the spectacular results.  You must try this, it is super easy, super fast and super delicious ranking it high on our list of recommends – both for the pans and for the cake recipe.  Give it a go.

ingredients

 Ingredients:

(for 1 cake – that’s what makes this recipe so great – you can make it for 1 or 2 or more – you gotta get those mini spring forms!):

1 mini spring form pan

1 package Oreo cookie crust crumbs

1 banana – sliced on the diagonal

1/2 pint PC Salted Caramel Ice Cream (or any other ice cream of your choosing)

1 tbsp butter

garnish: almonds, any nuts, crushed cookies, chocolate sauce, fruit, wvr

That’s it!

Take the spring form pan and line it with Saran wrap.  This will make it super easy to remove later.  Melt butter.  Then take 5 tbsps of cookie crumbs and add melted butter.  Sift gently.  Firmly press crumb/butter mixture into the bottom of the pan and up the sides a bit.  Let your ice cream thaw a bit and then take 1/3 of a pint and spread it over the cookie crumble mix.

Top with a layer of bananas and then repeat ice cream layer.  Smooth the top layer with a spatula.  Retire to the freezer until stiff, approx 1 hr.  Remove and prepare to unwrap.

Un-mold cake, remove wrapping and place on serving plate.  Smooth over top with a pastry knife or spatula dipped in hot water.  Decide on your garnishes.  Here, I took some spicy almond brittle I had on hand and chopped it up.  I finished with a little chocolate drizzle.  Done!
