Roasted Mushroom and Radicchio Fall Salad

This is all it takes.

Fall feels like it’s coming fast, and almost instantaneously I feel like our home is craving something warm and filling that feels like a big hug.  Salad doesn’t usually fit the bill, but this recipe packs a whack of warm- filling- comforting- fall-like deliciousness that is over the top.  It is super super easy to put together and is really impressive.  Here are a couple of insider tips:

– for easy prep, you can grill the mushrooms ahead of time and then just toss ingredients together at the last minute

– serve over a bed of rice or couscous for a quick and filling entree – a couple of parm shavings work beautifully

– for a fabulous entree – serve with grilled fish, chicken breast or a steak – impressive and easy!

– for a meat-free dinner choice, serve with two poached organic eggs – this combo is my hubby’s fav and he is no vegetarian



 Slice radicchio and roast mushrooms.  Be sure to use Roasted Hazelnut Oil – it’s the bomb.


 Fab Fall Roasted Mushroom and Radicchio Salad:

1. Grab some large and luscious Portobello mushroom caps.  Prep about 3 medium for each head of radicchio.

2. Season Portobello caps with salt, pepper and Roasted Hazelnut Oil.  Broil for 10 – 12 minutes until done.  Slice.

3. Slice up a head of radicchio.

4. Chop up some parsley, about 2 tbsps.

5.  Just before serving, toss together mushrooms, parsley and radicchio.  Season with 1 tbsp lemon juice, olive oil and balsamic, salt and pepper.  If you want to get adventurous, add in 2 cloves of roasted garlic, pure yummy-ness.

6. Serve!

    I’ve been wanting to try Radicchio but wasn’t sure how. I don’t like mushrooms though but I would like to try a radicchio salad of some kind.
