The weather’s getting cooler and I’m starting to crave some fall dishes. Brussels sprouts are not high on my list, but this happens to be one of my favourite salads. It doesn’t taste at all like the brussels sprouts you’re thinking of, trust me!

I first wrote about this salad after a visit to the old Alimento on King, and I wanted to re-post the recipe today with a few modifications. It’s a nice way to add a light and healthy touch to your thanksgiving table. And any way to get a few more veggies into the family during our Thanksgiving Day eating marathon is a win in my books! Just to give you an idea, this is what an Italian breakfast looks like at Thanksgiving at my cottage:

So you can imagine how much food we eat at dinner. I’ll be reaching for the brussels sprout salad for sure!

Try it this fall. It’s a nice change from the baked and roasted vegetables we get so much of this time of year. And reserve a spot for this recipe in your Thanksgiving menu!



Shaved Brussels Sprout Salad
Serves 4

2 slices of pancetta (about 2 mm thick)
4 oz. (approx.) Parmigiano-Reggiano cheese
1 medium-sized apple
3 dozen Brussels sprouts
Caramelized pancetta vinaigrette (see below)

Caramelized Pancetta Vinaigrette
½ small shallot, peeled
½ tsp grainy mustard
1 tsp honey
Reserved pancetta fat
2 tbsp apple cider vinegar
salt and pepper to taste
¼ cup olive oil
1 tsp chopped chives

1. Bake pancetta on parchment-lined baking sheet at 350°F for 12 to 15 minutes. Reserve fat for dressing. Place all dressing ingredients except olive oil and chives in a bowl and blend or whisk until smooth, slowly adding oil until emulsified. Add chives and mix by hand.
2. Shave cheese into thin curls using a vegetable peeler. Cut apple into matchsticks using a mandolin or sharp knife. Shave Brussels sprouts into very thin (about 2mm) slices using a mandolin or sharp knife. Toss all together in a bowl until well mixed, then add just enough dressing to coat.
